Two big secrets of our seasonings' quality

1. The long journey

Alicante brings the spices from specific geographical areas, choosing for each one the right growing place. The legendary ships, with their fragrant and exotic cargo, reach from every corner of the world to be packaged under the same name: Alicante.

Brazil, Ceylon, Chile, Peru, Croatia, Egypt, Netherlands, France, Italy, Spain, the Caribbean, Indonesia, Madagascar, Russia, Turkey are all the countries from which all our products come from. Each spice is taken from its place of origin to assure they are genuine and they have not suffered any artificial treatment. Spices should be healthy, clean and should also contain the active principles that they own. For that reason, the long journey - which is reminiscent of those conquerors and adventurers' journeys in search of the delicious treasure - is repeated year after year, with the same great results.

2. The right processing

In addition to the correct selection of products, some procedures are essential in order to assure the seasoning's excellence.

The first condition is that all of its oils and aromas are present and they are not attacked by insects and micro-organisms (moulds, yeasts, mushrooms and bacterias).

Control includes not only the microscopic and organoleptic analysis (aroma, taste and color) but also a series of chemical analysis that specify the quality of the sample (tests of ethereal extract, essence oils, humidity, total ashes, insoluble ashes, color).

Alicante is also interested in the methods that guarantee the product preservation up to the very time of consumption. Thus, packages are designed with the newest features, and spices go through special chambers to be treated.

However what is remarkable of the whole process is, undoubtedly, the immunization in those chambers, through an organized and strict control of fumigation carried out with proper chemical products that are innocuous to human consumption - thus helping a long conservation without any alteration of the organoleptic properties.

Our products have a demanding selection quality and a strict processing. Among the special treatments we can mention:

The ground spices are processed in impact mills at high revolutions - around 10,000 revs per minute - which achieve a standard grain size without loosing the original aroma. One of these mills grinds pepper at about 70º C (158º F) to reduce the lost of volatile essence oils.


All the spices are selected through mechanical procedures such as a machine that separates them by sifting, sweeping and air blowing, thus getting a very uniform quality. Oregano, for example, goes through 3 different cleaning stages - thus assuring a product free from seeds, sharp stems, stones and dust - in order to get a result which improves the original product.
